[Evergreen-documentation] Item Statuses Document

Hi All,

We're working on a document for item statuses, how they integrate with the
system, what they are (at least in the stock out of the box version).  We
came up with a list so far and opened this Google doc up to those who want
to contribute:

If anyone is interested in taking a look over and editing it as you go,
please do!  It'd be appreciated!  Eventually, this will be put in the
