If you  look at the Importing Bibliographic Records page,
http://open-ils.org/dokuwiki/doku.php?id=evergreen-admin:importing:bibre
cords there is a section at the bottom:  Restoring your Evergreen
database to an empty state.

If you run that, it should get rid of the Gutenberg records.

You may have to change the db-password and db-version for the vmware
image.
