The Z client can choose "marc21" or "xml", all on the same port.  For
instance, in yaz-client has a 'format' command where you can specify
that.  Theoretically, Simple2Zoom can support any output format, given
the proper configuration dance.  I don't, however, know any dances
other than xml or marc21.
