[OPEN-ILS-DOCUMENTATION] Field Documentation Documentation

Hi there,

This is my first attempt at documenting something in docbook.  I was investigating what exactly "Field Documentation" did, and decided to document it since I had to figure it out anyway.  I hope this helps!  

Also thanks to Jeremy for helping me sort out some minor problems with my docbook XML.  :)
