[OPEN-ILS-DOCUMENTATION] Cataloging Documenation 2.1

I had one of our staff check the 2.0 documentation against our install of
2.1 to see what was functional and it was still applicable.  See entries
for


   - Working with the MARC Editor
   - Overlaying MARC records

I think these can be moved up to the 2.1 documentation.
