[OPEN-ILS-DOCUMENTATION] Deleting unused docs and images

Hi DIG!

Here at the hack-a-way, I was inspired by Blake talking about Antora, so I looked into cleaning up any of our docs files that we aren't actually using.  Josh Stompro started the below bug on this topic years ago, so I posted a branch there and I'd love any help reviewing it.  It has three commits, which together delete several hundred files.  Any of these can be recovered, of course, thanks to git's history, but it's easiest to catch a mistake before we push it live.  So if you want to scan through the list of files in these commits and make any comments, feel free!  (FYI, I'm not in any rush to push these changes.)
