That is great news-- a newer version would be quite useful.
The demo servers have some sample holdings and users that Indiana Evergreen made available some time ago-- I can pass those along to you if you wish.

I have been working on a VM image myself; getting ready to share.
So far what I have runs under KVM; but I'm thinking I can convert to a VBox or VMWare compatible w/o too much hassle (hah!).
The image is a Gentoo base; Kernel 3.3; PostgreSQL 9.1.5; Apache 2.2.22; Perl 5.12 mod_perl 2.0.4; eJabberd 2.1.10; OpenSRF and Evergreen master.
I load some basic data now; but would love to get more sample stuff imported. Also, I need to get the size below 16G before it's really "downloadable".

The no virtualhosts message is actually pretty "normal". Most users would edit their apache configuration to avoid those sorts of harmless warning messages.
That said, that 2.0.3 VM is pretty ancient and 2.0 series of Evergreen is actually no longer supported by the community. For now, I've relocated the 2.0.3 VM to the Code Museum.
We'll have to revisit how VMs are made and maybe plan for some better updating/support in the future.
