One option is to use the Library Setting, "Format Dates with this
pattern", but it's a sledgehammer that would affect almost every
displayed date in the staff client.

You'd want four consequtive capital E's.  For example, "EEEE, MMM d,
yyyy" in that setting would give you dates like "Thursday, Oct 1,
2015"
