[OPEN-ILS-DOCUMENTATION] Which Git branche/tag are used for creating the latest 2.5.x version of docs

Thanks you both Galen and Robert, this has been really helpful as I am
finally getting a much fuller understanding of Git and the community
workflows with Git.
