Hi Kristi,
I'd recommend updating your copy of the template toolkit code. I
recently submitted a fix to this problem. The code will now fall
through to the MARC item_type if no mattype configuration is defined.
The latest code now lives on the new Evergreen git server in the
"evergreen/equinox.git" repository in the "template-toolkit-opac" branch.

Admin -> Server Administration -> MARC Coded Value Maps.
Note, the template toolkit OPAC requires (at minimum) Evergreen 2.1 to
function.
